Extra maturation brings more complexity, but, like Gold Drop, it is still great in a number of dishes, and with cheese of course. Balsamic Vinegar of Modena IGP (ABM) IGP balsamic vinegars are a mixture of cooked grape must and wine vinegar. The only other ingredient Acetomodena uses, is time.
